  • 1 block (14 oz) extra-firm tofu
  • 3 tablespoons cornstarch
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between clean towels for 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into 1-inch cubes and coat them with cornstarch.
  3. Heat neutral oil in a skillet over medium-high heat. Add the tofu cubes and cook until golden brown on all sides.
  4. Remove the tofu and sauté sliced bell peppers and onions in the same pan until caramelized.
  5. Stir in minced garlic and ginger, cooking for an additional 30 seconds.
  6. Add pineapple chunks and cook until caramelized, about 2-3 minutes.
  7. In a bowl, mix soy sauce, rice vinegar, and maple syrup. Pour over the sautéed mixture along with the tofu and stir gently for about 2 minutes.
