  • 3 large red apples
  • 1 3/4 cups apple juice
  • 2 tablespoons apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt

Instructions

  1. Core and chop the apples into large chunks. In a large pot, combine the chopped apples with apple juice and apple cider vinegar. Bring to a boil, then reduce heat and cover. Simmer for about 30 minutes until the apples are soft.
  2. Stir in brown sugar, vanilla bean paste, cinnamon, nutmeg, cloves, and salt until well mixed.
  3. Use an immersion blender to blend the mixture until smooth; if needed, transfer to a standing blender carefully.
  4. Return the blended mixture to the pot and cook uncovered over medium heat for another 30-45 minutes until thickened, stirring every few minutes.
  5. Once thickened to your liking, serve warm on toast or pancakes.
