  • 2 cooked and chopped chicken breasts
  • 3 cups coleslaw mix
  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 46 tortillas
  • Sriracha sauce (to taste)
  • Grated carrot (optional)
  • Chopped cilantro (optional)

Instructions

  1. Prepare the peanut sauce by whisking together peanut butter, soy sauce, brown sugar or honey, rice vinegar, minced garlic, minced ginger, and sriracha in a small bowl. Adjust consistency with water if needed.
  2. In a large bowl, combine chopped chicken, coleslaw mix, optional grated carrot, cilantro, and peanuts. Drizzle with the peanut sauce and mix well.
  3. Warm tortillas in the microwave for about 30 seconds to soften.
  4. Divide filling among tortillas and roll tightly like burritos. Slice in half if desired.
