  • 1 whole turkey (fresh and all-natural)
  • 1/2 cup melted butter
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • 1 cup softened butter
  • 2 tablespoons fresh sage, stem removed and chopped
  • 2 tablespoons fresh rosemary, stem removed and chopped
  • 1 tablespoon fresh thyme, stem removed and chopped
  • 1 whole lemon, zested
  • 4 cloves garlic, minced
  • 3 teaspoons sea salt

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In your roasting pan, add two cups of water to create steam.
  3. Combine melted butter, white grape juice, and chicken stock in a saucepan; set aside.
  4. Mix softened butter with chopped herbs, lemon zest, garlic, and sea salt for the herb butter rub.
  5. Rub two-thirds of the herb butter under the turkey skin and spread the rest over the top.
  6. Stuff the cavity with vegetables or lemons if desired.
  7. Soak cheesecloth in the buttery mixture and drape it over the turkey.
  8. Bake for approximately 15-20 minutes per pound until fully cooked.
  9. Remove cheesecloth for the last 30-45 minutes to brown the skin.
  10. Let rest for 15 minutes before carving.
