  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear beef belly pieces until browned on all sides (5–7 minutes). Remove from pan.
  2. In the same pan, sauté garlic and ginger until fragrant (1–2 minutes).
  3. Return beef to the pan; add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well.
  4. Bring to a boil; reduce heat and simmer uncovered for 1 to 1½ hours until beef is tender.
  5. Adjust seasonings if necessary; serve hot over steamed rice garnished with green onions and sesame seeds.
