  • 1 lb chicken breast
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • ¼ tsp cayenne pepper
  • Fresh parsley or cilantro, chopped
  • Juice of ½ lime
  • ½ cup reserved pasta water

Instructions

  1. Cook the penne pasta in salted water until al dente. Reserve some pasta water before draining.
  2. Season chicken with salt, pepper, and Cajun seasoning, then cook in a skillet until done. Set aside.
  3. In the same skillet, sauté bell peppers and garlic in olive oil and butter until softened.
  4. Stir in additional Cajun seasoning, smoked paprika, and red pepper flakes; then add heavy cream and Parmesan cheese to create the sauce.
  5. Combine cooked pasta and protein into the sauce; adjust thickness with reserved pasta water as needed.
  6. Garnish with fresh herbs and lime juice before serving.
