  • 3 tablespoons maple syrup
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • Pinch of salt

Instructions

  1. Prepare the Coconut Rice: Rinse jasmine rice until water runs clear. In a saucepan, combine rice, coconut milk, water, and salt. Bring to boil, cover, reduce heat and simmer for 15 minutes. Let sit off heat for 5 minutes before fluffing.
  2. Cook the Chicken: Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; add to skillet and cook until golden brown (6–8 minutes).
  3. Make the Sauce: Whisk together maple syrup, sriracha, soy sauce, garlic, and ginger in a bowl. Pour over chicken in skillet and cook until sauce thickens (2–3 minutes).
  4. Serve: Place coconut rice on plates and top with spicy maple chicken. Garnish with cilantro and lime if desired.
