  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). In a skillet over medium heat, brown the ground beef. Add the diced onion and minced garlic; sauté until fragrant.
  2. Stir in the corn, black beans, diced tomatoes, chili powder, cumin, paprika, and salt. Simmer for about 5 minutes.
  3. In a separate bowl, combine the corn muffin mix with egg and milk until just combined.
  4. Pour the beef mixture into a greased baking dish and spread the cornbread batter over the top.
  5. Bake for 25 to 30 minutes until golden brown. Top with shredded cheddar cheese and bake for an additional 3 to 5 minutes until melted.
