  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

  2. In a mixer, cream the butter until smooth. Add brown sugar, molasses, and pumpkin puree; mix until combined.

  5. Chill the dough for at least 30 minutes.
