  • 2 tablespoons extra virgin olive oil
  • 4 cups thinly sliced onions
  • 6 medium-small Yukon gold potatoes, peeled and thinly sliced
  • 3/4 cup grated Gruyere cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 teaspoon butter (for greasing)
  • 1/3 cup chicken or vegetable stock
  • 1 teaspoon finely minced fresh rosemary

Instructions

  1. Preheat your oven to 400°F.
  2. In a sauté pan, heat 1 tablespoon of olive oil over medium-high heat. Add sliced onions and cook until golden brown, about 15 to 20 minutes.
  3. In a large bowl, toss the sliced potatoes with the remaining olive oil, half of the Gruyere cheese, Parmesan cheese, salt, and white pepper.
  4. Lightly butter a gratin dish and layer the caramelized onions at the bottom. Arrange the potato slices on top and pour stock over everything. Sprinkle remaining cheese on top.
  5. Cover with foil and bake for about 50 minutes until fork-tender. Remove foil and broil for an additional 5 minutes until golden brown.
  6. Sprinkle with minced rosemary before serving.
