  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat. Add onion and sauté until soft, about 5 minutes.
  3. Stir in garlic and mushrooms; cook until browned and moisture evaporates, approximately 8 minutes.
  4. Season with thyme, salt, pepper, and apple vinegar if using; cook until liquid is absorbed.
  5. Stir in cream cheese, Parmesan, and Dijon mustard if desired until smooth; fold in grated Gruyère.
  6. Mix one beaten egg into the filling before cooling slightly.
  7. Roll out puff pastry and cut diagonal strips on each side for braiding.
  8. Place filling down the center of the pastry; fold ends over, then braid strips alternately from left to right.
  9. Transfer to the prepared tray and brush with the remaining beaten egg.
  10. Bake for 20–22 minutes until golden brown.
