  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Brown meatballs for about 5 minutes; remove from pot.
  3. In the same pot, sauté chopped onion until translucent (3–4 minutes).
  4. Add chicken broth and bring to a boil. Reduce heat to simmer.
  5. Return meatballs to the pot and simmer for about 15 minutes.
  6. Stir in heavy cream and spinach; cook until spinach wilts (about 2 minutes).
  7. Serve hot, garnished with fresh basil.
