  • ½ pound ground turkey sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F. Line a cookie sheet with parchment paper.
  2. Slice each acorn squash in half and scoop out the seeds. Place them cut side down on the baking sheet and bake for about 20 minutes until fork-tender.
