  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head of garlic, cut the top off
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic: Wrap the head of garlic in foil with olive oil and salt; bake for about 30 minutes until soft.
  3. Grease a 9×13-inch baking dish with butter.
  4. Peel and thinly slice the potatoes.
  5. Layer the potato slices upright in the baking dish.
  6. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until melted but do not boil.
  7. Squeeze out roasted garlic cloves into a bowl; mash into a paste and stir into the creamy mixture.
  8. Pour the creamy mixture over the layered potatoes evenly.
  9. Cover with foil and bake for 40 minutes; remove foil, add remaining cheeses on top, and bake uncovered for an additional 30 minutes until golden brown.
  10. Allow to cool slightly before garnishing with fresh chives.
