  • 1 head garlic
  • 1 teaspoon olive oil
  • 2 pounds red potatoes (washed and quartered)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • Fresh ground pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 1 hour until soft.
  2. In a large pot, cover quartered red potatoes with cold water and add 1 teaspoon of salt. Bring to a boil and simmer for about 15 minutes or until fork-tender.
  3. Drain potatoes and return them to the pot with roasted garlic cloves squeezed out.
  4. Warm half and half with butter in a separate bowl until melted, then pour it over the potatoes along with salt and fresh ground pepper.
  5. Mash until creamy yet slightly chunky for texture. Garnish as desired before serving.
