  • 2 lbs Red potatoes
  • 1 teaspoon fresh thyme
  • 1 head roasted garlic (1215 cloves)
  • ¼ cup salted butter
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • ½ cup vegetable or chicken broth
  • ½ cup heavy cream
  • 1 tablespoon chopped parsley

Instructions

  1. Spray the inside of a three-quart slow cooker with cooking spray. Add red potatoes, thyme, roasted garlic cloves, butter, salt, pepper, and broth. Stir gently to combine and cover.
  2. Set your slow cooker on high for 4-5 hours or low for 7-8 hours until potatoes are tender.
  3. Once cooked, add heavy cream starting with ⅓ cup; adjust to desired creaminess.
  4. Mash the ingredients using a hand mixer or potato masher until smooth. Adjust seasonings as needed.
  5. Serve topped with chopped parsley.
