  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper to taste
  • 8 ounces ricotta cheese
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze for drizzling

Instructions

  1. Preheat oven to 400ºF. In a baking dish, combine cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for 20 minutes until bursting.
  2. While tomatoes roast, blend ricotta with remaining garlic, olive oil, half the basil, salt, and pepper until smooth. Chill.
  3. Slice bread into half-inch pieces. Mix remaining olive oil and garlic; brush on bread slices and season with salt and pepper. Bake for 10–12 minutes until golden.
  4. To assemble, spread roasted tomatoes on toasted bread slices topped with ricotta mixture, garnish with remaining basil, and drizzle with balsamic glaze.
