  • 2 eggs

  • 1 cup milk
  • 1/2 cup cold butter, cubed (for crumb topping)
  • 1 cup light brown sugar (for crumb topping)
  • 1 cup flour (for crumb topping)
  • 1 teaspoon cinnamon (for crumb topping)
  • 1/2 teaspoon nutmeg (for crumb topping)

Instructions

  1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In an electric mixer bowl, beat together butter and pumpkin puree until blended. Add sugar and mix until combined; then beat in eggs and vanilla.
  4. Gradually add dry mixture to wet mixture in three parts, alternating with milk until just combined.
  5. For crumb topping: Combine cold cubed butter, brown sugar, flour, cinnamon, and nutmeg in a bowl until small crumbs form.
  6. Pour half of the batter into the prepared dish; layer half of the crumbs on top. Add remaining batter and finish with remaining crumbs.
  7. Bake for 45-55 minutes or until a toothpick inserted comes out clean.
