  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (160°C). Hollow out mini pumpkins if using; otherwise, set aside ramekins.
  2. Whisk egg yolks and sugar in a medium bowl until smooth. Incorporate heavy cream, vanilla extract, pumpkin puree, cinnamon, ginger, and salt until well combined.
  3. Pour the mixture into pumpkins or ramekins placed in a water bath for even baking. Bake for about 30 minutes until slightly jiggly in the center.
  4. Allow to cool at room temperature before chilling in the refrigerator for at least two hours.
  5. To serve, sprinkle granulated sugar over each custard and caramelize with a kitchen torch until golden brown.
