  • 8 oz crumbled feta cheese
  • 1 cup ricotta cheese
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

Instructions

  1. In a mixing bowl, combine crumbled feta and ricotta cheese until smooth. Optionally mix in fresh thyme.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Cut phyllo sheets in half lengthwise and cover with a damp towel to prevent drying.
  4. Brush one strip of phyllo with melted butter or olive oil, place about 1 tablespoon of filling at one end, fold sides in, and roll tightly.
  5. Place rolls seam-side down on the baking sheet and brush tops with more butter or oil.
  6. Bake for 15-20 minutes until golden brown and crispy.
  7. For the chili honey, warm honey in a saucepan, stir in chili flakes, and let infuse for a couple of minutes.
