  • 1 tablespoon olive oil
  • 14 oz turkey sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni (or your favorite short pasta)
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Add turkey sausage and cook for 4-5 minutes until lightly browned. Remove from pot and set aside.
  2. In the same pot, sauté minced garlic for about 30 seconds until fragrant.
  3. Stir in elbow macaroni, chicken broth, whole milk, smoked paprika, black pepper, and salt. Bring to a gentle boil. Cover and simmer for about 8-10 minutes until pasta is tender.
  4. Reduce heat to low and mix in cheddar cheese, mozzarella cheese, and butter until melted and creamy.
  5. Return browned turkey sausage to the pot and stir well to combine. Heat through for another minute or two.
  6. Serve warm with optional garnishes like fresh parsley or green onions.
