  • 1 lb chicken or turkey sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sausage rounds and brown for about 4–5 minutes. Remove from pan.
  2. In the same skillet, sauté diced onion and bell pepper for about 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in smoked paprika and black pepper; add uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; mix well. Return browned sausage to the pan.
  5. Bring to a boil then cover and reduce heat to low. Simmer for about 20–22 minutes until rice is tender.
  6. Let rest for 5 minutes off heat before fluffing with a fork. Garnish with fresh parsley.
