  • 1.5 pounds shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • Fresh parsley, chopped
  • Red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil and butter in a large oven-safe skillet over medium heat. Sauté diced onion for about five minutes until softened. Add minced garlic and red pepper flakes (if using) and sauté for another minute.
  2. Add orzo pasta to the skillet and toast lightly for one to two minutes, stirring constantly. If using white apple vinegar, add it now and let it simmer briefly.
  3. Pour in chicken broth along with lemon zest, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for ten to twelve minutes until most liquid is absorbed.
  4. Stir in shrimp so they are nestled among the orzo; cover again and cook for three to five minutes until shrimp are pink and opaque.
  5. Remove from heat; stir in grated Parmesan cheese and heavy cream until melted into a creamy sauce.
  6. Finish with fresh lemon juice and chopped parsley; adjust seasoning if needed.
  7. Serve hot with extra Parmesan cheese on top.
