  • 10 oz. mushrooms (button or baby bella)
  • 2 Tablespoons salted butter
  • 2 large boneless skinless chicken breasts
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 34 Tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon EACH: mustard powder, dried thyme
  • ½ cup dry white grape juice
  • 3 cloves garlic (minced)
  • 3 Tablespoons cornstarch
  • ⅓ cup heavy cream

Instructions

  1. Season the chicken breasts with salt and pepper and coat lightly in flour.
  2. In a large skillet over medium heat, melt butter and sauté sliced mushrooms until golden brown.
  3. Brown the floured chicken breasts in the same skillet until golden on both sides.
  4. Remove the chicken and add beef broth, soy sauce, onion powder, mustard powder, thyme, grape juice, and garlic to the skillet; stir well.
  5. Return the chicken to the skillet and simmer gently for about 25 minutes.
  6. Mix cornstarch with water and stir into the sauce along with heavy cream; cook until thickened.
