  • 1 lb boneless, skinless chicken breast
  • 8 oz spaghetti
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat; season chicken with salt, pepper, and smoked paprika. Cook chicken for 6-7 minutes on each side until fully cooked. Remove from skillet and slice.
  3. In the same skillet, melt butter and sauté onions and garlic for 2-3 minutes until softened.
  4. Add chicken broth and simmer; stir in heavy cream and cook until slightly thickened.
  5. Lower heat and mix in Monterey Jack and Parmesan cheeses until melted.
  6. Toss cooked spaghetti into the sauce until well coated.
  7. Serve topped with sliced chicken, parsley, and optional crushed red pepper flakes.
