  • 1 pound sirloin steak
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice, quinoa, or cauliflower rice
  • 1 cup roasted chickpeas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt or coconut yogurt
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil for vinaigrette
  • 2 tablespoons fresh lemon juice for vinaigrette
  • 1 teaspoon honey for vinaigrette
  • 1 small clove garlic for vinaigrette
  • ½ teaspoon dried oregano for vinaigrette

Instructions

  1. Whisk together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add the sirloin steak and marinate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the marinated steak for 4–5 minutes per side until medium-rare. Let it rest before slicing.
  3. Mix yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl to prepare tzatziki.
  4. Divide cooked rice or cauliflower rice among bowls. Top with sliced steak, cherry tomatoes, cucumber, red onion, olives, and tzatziki.
