1 pound sirloin steak
3 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon salt
¼ teaspoon black pepper
2 cups cooked brown rice, quinoa, or cauliflower rice
1 cup roasted chickpeas
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
½ cup kalamata olives, pitted
⅓ cup crumbled feta cheese
¼ cup fresh parsley or dill, chopped
1 cup plain Greek yogurt or coconut yogurt
½ cucumber, grated and excess water squeezed out
1 tablespoon fresh dill, chopped
3 tablespoons olive oil for vinaigrette
2 tablespoons fresh lemon juice for vinaigrette
1 teaspoon honey for vinaigrette
1 small clove garlic for vinaigrette
½ teaspoon dried oregano for vinaigrette
Instructions
Whisk together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add the sirloin steak and marinate for at least 30 minutes.
Heat a grill or skillet over medium-high heat. Cook the marinated steak for 4–5 minutes per side until medium-rare. Let it rest before slicing.
Mix yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl to prepare tzatziki.
Divide cooked rice or cauliflower rice among bowls. Top with sliced steak, cherry tomatoes, cucumber, red onion, olives, and tzatziki.
