  • ¾ cup kalamata olives, pitted and halved
  • ¾ cup crumbled dairy-free feta cheese (for vegan option)
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh mint leaves, chopped
  • ⅓ cup extra virgin olive oil
  • ¼ cup fresh lemon juice (approximately 2 lemons)
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or maple syrup for vegan option)
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper to taste

Instructions

  1. Drain and rinse chickpeas under cold water; pat dry.
  2. Dice cucumber, bell peppers, and red onion into uniform pieces; halve cherry tomatoes and olives.
  3. Chop parsley and mint finely to enhance freshness.
  4. In a small bowl, whisk together lemon juice, garlic, Dijon mustard, honey (or maple syrup), oregano, cumin, salt, and pepper while gradually adding olive oil until emulsified.
