  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a large bowl, combine red onion, bell peppers, cherry tomatoes, garlic, olives, and optional capers. Drizzle with olive oil and season with oregano, paprika, salt, and pepper; toss to coat.
