  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 3 cloves garlic (finely chopped)
  • 4 ripe tomatoes (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (soaked overnight)
  • Additional veggie broth as needed

Instructions

  1. Heat olive oil in a pot or Instant Pot on sauté mode over medium heat. Add chopped onion and garlic; sauté until translucent.
  2. Stir in chopped tomatoes, ground cumin, paprika, smoked paprika (if using), turmeric, tomato paste, salt, and pepper. Cook for about 5 minutes until fragrant.
  3. Add canned white beans and soaked dried beans along with veggie broth; stir well.
  4. For stovetop: Bring to a boil, reduce heat to low, cover, and simmer for about 25 minutes until beans are tender. For Instant Pot: Seal lid and pressure cook on high for about 10 minutes; allow natural release afterward.
  5. Taste and adjust seasoning as desired before serving hot.
