  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup coconut oil (melted)
  • 1 cup lemon juice
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon turmeric (for color)
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, and salt. Mix in melted coconut oil until crumbly.
  3. Press two-thirds of the mixture into a greased 9×9-inch baking dish for the crust.
  4. In another bowl, whisk together lemon juice, granulated sugar, cornstarch, turmeric, and water until smooth. Pour over the crust.
  5. Sprinkle remaining crumble mixture on top and bake for about 38 minutes until golden brown.
  6. Allow to cool completely before slicing into squares.
