  • 200 grams ground beef
  • 400 grams lean ground beef
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml fruit juice (white grape juice)
  • 4 garlic cloves (minced)
  • 2 cups hot water or stock (vegetable, beef, or chicken stock)
  • 810 tablespoons lemon juice
  • olive oil
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoon dried parsley
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour

Instructions

  1. In a large bowl, combine both types of ground beef with minced onion, garlic, soaked bread, egg, cumin, oregano, parsley, salt, and pepper. Mix until just combined.
  2. Form small meatballs about the size of golf balls and place them on a plate.
  3. Heat olive oil in a skillet over medium heat and sauté meatballs until browned on all sides.
  4. In the same skillet, melt butter and whisk in flour until smooth. Gradually add hot water or stock while stirring until thickened; stir in lemon juice.
  5. Return meatballs to the skillet and let simmer in sauce for about 10 minutes before serving.
