  • 12 tablespoons avocado oil
  • 1 large bell pepper, chopped into bite-sized pieces
  • 1/2 small onion, chopped into bite-sized pieces
  • 1/2 medium orange, thinly sliced with seeds removed
  • Salt and pepper to taste
  • 1 cup orange juice
  • 2 tablespoons orange marmalade
  • 1/2 cup white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a bowl, mix orange juice, orange marmalade, sugar, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes to create the marinade.
  2. Add chicken thighs to the marinade and let sit for 15 minutes.
  3. Heat avocado oil in a skillet over medium-high heat. Sauté chopped bell peppers and onions for about 5 minutes until tender.
  4. Add marinated chicken and remaining marinade to the skillet. Cook for 10-12 minutes until chicken is browned and cooked through.
