  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter (cubed)

Instructions

  1. Preheat your oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; add sugar and vanilla, mixing well. Incorporate eggs one at a time and then fold in sour cream.
  3. In another bowl, mix diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice.
  4. Pour half the apple mixture over the cheesecake filling followed by the remaining apple mixture.
  5. For the crumble topping, mix flour, brown sugar, cinnamon, and cubed butter until crumbly; sprinkle over cheesecake.
  6. Bake for about 1 hour and 5 minutes until set but slightly jiggly in the center. Cool before refrigerating for at least 4 hours.
