  • 1 cup sour cream
  • 3 medium apples, peeled and diced

  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan.
  3. Beat cream cheese until smooth in a large bowl; add granulated sugar and vanilla extract. Mix in eggs one at a time, then fold in sour cream.
  4. Pour filling over crust and smooth the top.
  5. Mix diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice; spread over cheesecake layer.
  6. For crumble topping, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Sprinkle over apples.
  7. Bake for about 1 hour and 5 minutes; cool gradually in the oven with door ajar. Chill in fridge for at least four hours before serving.
