  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • 1/4 cup all purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Mashed potatoes for serving

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. In a zip-top bag, combine beef stew meat, flour, salt, black pepper, garlic powder, onion powder, rosemary, and thyme; shake to coat.
  3. Brown the seasoned meat on all sides in the pot.
  4. Pour in the beef broth while stirring to release any browned bits from the pot.
  5. Add carrots and bay leaves; bring to a boil then reduce heat to medium-low.
  6. Cover and simmer for about 45 minutes, stirring occasionally.
  7. Stir in frozen peas five minutes before serving; remove bay leaves.
