  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 4 ounces Brie cheese (rind removed)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter (melted)

Instructions

  1. Preheat the oven to 375°F (190°C). Heat olive oil in a medium saucepan over medium heat. Add cranberries and cook until they soften (about 5 minutes).
  2. Stir in honey, orange juice, cinnamon, ginger, salt, and pepper. Cook for another 3-4 minutes until thickened.
  3. Cut pockets into each chicken breast and stuff with Brie followed by the cranberry mixture.
  4. Secure openings with toothpicks. Sear stuffed chicken in an oven-safe skillet for 2-3 minutes on each side until golden brown.
  5. Mix panko breadcrumbs with melted butter and sprinkle on top of the chicken.
