  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced (seeds separated)
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Prepare the marinade by mixing olive oil, lime juice and zest, brown sugar, and spices in a bowl.
  2. Marinate the chicken breasts for at least 30 minutes for maximum flavor.
  3. Preheat your grill or skillet over medium-high heat and cook marinated chicken for about 5 minutes on each side until fully cooked.
  4. While the chicken cooks, mix all avocado salsa ingredients in a separate bowl.
