  • 1/3 cup honey
  • 2 cups chicken broth (or vegetable broth)
  • 1/2 cup diced bell peppers
  • 2 tablespoons soy sauce
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 tablespoons finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil (optional but recommended)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 3 tablespoons ketchup
  • 2 tablespoons water
  • 2 cloves garlic, finely minced
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1 tablespoon olive oil or melted butter
  • 1/2 cup frozen peas (no need to thaw)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a bowl, combine ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil (if using), salt, and pepper. Mix until just combined and form into meatballs.
  3. Sear the meatballs in a skillet over medium heat for about 2-3 minutes on each side until golden brown.
  4. In a saucepan, whisk together honey, soy sauce, ketchup, water, and minced garlic; bring to a simmer.
  5. Spread uncooked rice in the baking dish and layer with bell peppers and peas. Pour in chicken broth and stir gently.
  6. Nestle the meatballs into the mixture and pour the honey garlic sauce over everything.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes until rice is cooked.
  8. Let rest for 5 minutes before serving.
