  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat oven to 375°F. Spray two baking sheets with non-stick spray and arrange three tortillas on each sheet. Bake for 3-5 minutes until crispy, flipping halfway through.
  2. In a skillet over medium-high heat, cook the ground beef until browned; drain excess grease.
  3. Stir in taco seasoning and water; bring to a boil then simmer for about 10 minutes.
  4. Warm refried beans in the microwave for 1-2 minutes.
  5. Layer one tortilla with refried beans, then seasoned beef, and top with another tortilla. Repeat layers.
  6. Spread enchilada sauce on the top layer and sprinkle with cheeses and toppings.
  7. Bake for an additional 5 minutes until cheese is melted and bubbly.
