  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until a dough forms.
  5. Roll dough into small balls and shape them into ovals on the baking sheet. Use a fork to create a crosshatch pattern and sprinkle lightly with sugar.

  7. For the filling, beat together more creamy peanut butter with softened unsalted butter until smooth; then gradually mix in powdered sugar and vanilla extract.
  8. Spread or pipe the filling onto one cookie's flat side and top it with another cookie.
