  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme or 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, cook butter over medium heat. Add sliced leeks, carrots, celery, and thyme; sauté until softened.
  2. Stir in garlic and cook for an additional minute.
  3. Sprinkle in flour and stir well; gradually add chicken stock while scraping the bottom of the pot.
  4. Bring to a boil, then season with salt and pepper.
  5. Add potatoes, cooked turkey, and bay leaves. Cover and bake in an oven preheated to 350°F (180°C) for about 45 minutes.
  6. If desired, stir in cream before serving and garnish with fresh parsley.
