  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper or smoked paprika (optional)
  • Cooked crumbled turkey (optional)
  • Extra shredded cheddar cheese (optional)
  • Sour cream or Greek yogurt (optional)
  • More fresh chives or parsley (optional)

Instructions

  1. Peel and cube the Yukon Gold potatoes into uniform ½-inch pieces.
  2. In a large pot over medium heat, melt butter or olive oil. Sauté chopped onions for about 5-7 minutes until softened.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Sprinkle flour over the mixture and stir continuously for about 1-2 minutes to form a roux.
  5. Gradually whisk in the broth until smooth; bring to a gentle simmer.
