  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, ground cinnamon, nutmeg, baking soda, baking powder, and salt.
