  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced
  • 1 can (20 oz) pineapple chunks, drained
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken pieces with soy sauce, olive oil, honey (or brown sugar), minced garlic, salt, and pepper. Marinate for 10–15 minutes.
