  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare a baking sheet.
  2. Place each potato between two chopsticks or skewers to prevent slicing through completely. Cut slits about ⅛ inch apart.
  3. Arrange the cut potatoes on the baking sheet and brush half of the melted butter into the slits.
  4. Season generously with kosher salt and pepper.
  5. Bake for 30 minutes, then gently pull apart layers and brush with remaining butter.
  6. Return to the oven for another 30-35 minutes until crispy outside and tender inside.
  7. Serve warm, adding more salt and pepper to taste.
