  • 16 cups dry bread cubes (about 3 large loaves of bread)
  • 1/2 cup butter
  • 2 cups onion (1/2" diced)
  • 2 cups celery (1/2" diced)
  • 3 teaspoons poultry seasoning
  • 1/2 teaspoon thyme (fresh or dried)
  • 1/2 teaspoon sage (fresh or dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1½ cups chicken broth
  • 2 large eggs
  • 1 tablespoon parsley (chopped, for garnish)

Instructions

  1. Prepare the bread cubes by cutting them into pieces and letting them air dry, or toast at 300°F for about 15 minutes.
  2. Sauté the onions and celery in melted butter over medium heat until softened.
  3. Stir in the poultry seasoning, thyme, sage, salt, and pepper; cook for a minute.
  4. In a large bowl, combine the bread cubes with the sautéed vegetables and gradually pour in chicken broth while mixing.
  5. Fold in beaten eggs to bind the mixture.
  6. Transfer to a greased baking dish, cover with foil, and bake at 350°F for about 30 minutes covered, then uncover and bake until golden brown for another 30 minutes.
