  • 4 tablespoons olive oil (2 for dough, 2 for topping)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (finely chopped)
  • ½ teaspoon flaky sea salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine flour, yeast, and salt. Gradually mix in warm water and 2 tablespoons of olive oil until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 6-8 minutes until smooth and elastic. Place it in an oiled bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
  3. Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil.
  4. Punch down the risen dough and divide it into 12 equal portions. Shape each portion into a ball and place them into the greased muffin cups. Let them rest for another 20 minutes.
  5. Mix garlic, rosemary, remaining olive oil, flaky sea salt, and black pepper in a small bowl. Press dimples into each muffin ball and spoon the topping generously over them.
  6. Bake for about 20-25 minutes until golden brown. Cool slightly before removing from the pan.
