  • 1 1/2 c + 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 c plain whole-milk yogurt
  • 1 c sugar
  • 3 large eggs
  • 2 tsp grated orange zest
  • 1/2 c vegetable oil
  • 1 1/2 c cranberries (fresh or frozen)
  • 1/3 c freshly squeezed orange juice
  • For the glaze: 1/3 c sugar, 1 c confectioners’ sugar, and fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch loaf pan.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, combine yogurt, sugar, eggs, orange zest, vanilla extract, and vegetable oil until smooth.
  4. Fold the dry ingredients into the wet mixture gently until just combined; then fold in cranberries.
  5. Pour batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. While cooling slightly, mix sugar and confectioners’ sugar with fresh orange juice to create the glaze.
  7. Drizzle glaze over the warm loaf and allow it to set before slicing.
