  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 75g (5 tbsp) butter (2 tbsp melted)
  • 2 tbsp double/heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Fresh parsley (for garnish)
  • Olive oil, salt & pepper (to taste)

Instructions

  1. Roast the garlic by slicing off the top bulb, drizzling with olive oil, wrapping in foil, and baking at 180C/356F for 50-60 minutes until soft.
  2. Cook peeled and diced potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain potatoes, mash with butter, cream, roasted garlic, and Parmesan; season to taste.
  4. Allow mashed mixture to cool slightly before adding egg yolks.
  5. Pipe into swirls on a parchment-lined tray and bake at 200C/400F for 15-20 minutes until golden.
  6. Garnish with parsley and extra Parmesan before serving.
