  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 75 g (5 tbsp) butter
  • 2 tbsp heavy cream
  • 60 g (3/4 cup) grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Roast the garlic by slicing the top off the bulb, drizzling with olive oil, wrapping in foil, and baking at 180C (356F) for 50-60 minutes.
  2. Peel and dice the baking potatoes into chunks, boil in salted water until fork-tender.
  3. Drain the potatoes and let them steam dry. Mash them with roasted garlic, butter, cream, Parmesan, salt, and pepper until smooth; mix in egg yolks.
  4. Pipe the mixture onto a lined baking tray using a star tip.
  5. Drizzle with melted butter and bake at 200C (400F) for 15-20 minutes until golden brown.
  6. Garnish with parsley and extra Parmesan before serving.
